All meat is wet-aged but few are dry-aged. Dry aging is a process in which the flavor and tenderness are enhanced. Subsequently our dry aged striploin creates an unforgettable meal. Dry aging takes place is highly controlled environments. As the beef loses moisture it drops in weight. Which in turn creates less sell-able poundage and makes it more expensive. The price is worth it though because dry aging is really the only process that can heighten the taste. Our dry-aging process occurs over fourteen days. When pairing Wagyu with this process, you can bet the flavor and tenderness will be second-to-none.
